Prep Your Own Polenta

  1. Bring 2 cups of salted water to a boil.
  2. Slowly add 2/3 cup cornmeal.
  3. Reduce heat to simmer then continue to stir for 15 minutes or until water has been absorbed and polenta is tender.
  4. Immediately pour polenta onto a parchment-lined sheet pan, spreading it to an even 1/2-inch thickness. Cover with plastic wrap and refrigerate until firm.
  5. Use a round cookie cutter to cut discs then proceed with recipe.
