2-Step Turkey Club

Experiment with our salad version of the classic club sandwich.

Ingredients (Serves 4)

1 10-oz package pre-cut romaine lettuce
1-1/2 cups bite-sized pieces cooked turkey
1pint cherry tomatoes, halved
1/3cup low-fat buttermilk ranch dressing
6slices precooked bacon, crumbled
1/4 cup crumbled blue cheese
1 demi-baguette

Instructions

  1. In a large bowl, toss lettuce, turkey and tomatoes with dressing. Top with bacon and sprinkle with blue cheese.
  2. Cut baguette lengthwise, lightly brush each half with olive oil and toast. Serve with salad.

Nutritional information

Nutrients per serving: 471 calories, 24 g fat, 28 g protein, 38 g carbs, 4 g fibre. Excellent source of folate and vitamin C.
