Feta With Spicy Relish

Salty and sweet, with a hint of heat, this starter will tempt your guests' palate.

Ingredients (Makes 6 servings )

1/2        English cucumber, peeled
2 tbsp finely chopped red onion
1/2 tsp finely chopped red chili
1/4 bunch fresh mint, finely chopped
2 pomegranate, seeds removed and reserved
1/2 tbsp fresh lemon juice
300 g feta
6 tbsp olive oil

Instructions

Two hours before:

  1. Cut cucumber in half lengthwise and chop into small cubes.
  2. In a bowl, mix next five ingredients with cucumber and season with salt and pepper.

To serve:

  1. Divide feta (slice or crumble) among six plates. Top with relish and drizzle 1 tablespoon of olive oil over each.
