Pink Almond Squares

Ingredients (Makes 12 squares )

1/3        cup blanched almonds
1/4 cup granulated sugar
2 egg whites
1 cup marzipan or almond paste
1 cup icing sugar
3 drops red food colouring

Instructions

  1. In a food processor, blend almonds and sugar. Add 1 egg white and blend until mixture is completely smooth, about 5 minutes.
  2. Place marzipan in a bowl and add almond mixture. Mash with a fork or potato masher.
  3. Knead mixture and place on parchment paper. Using the paper to protect your hands (it will be sticky), shape into a 5 x 5-inch square and refrigerate for 2 hours.
  4. Preheat oven to 400 F.
  5. Cut dough into 12 precise squares and place them on a parchment paper-lined sheet pan. Bake for 8 minutes, or until lightly browned.
  6. For the glaze, put remaining egg white into a small bowl. Add icing sugar in 1/4 cup intervals, whisking until you reach a toothpaste-like texture. Add food colouring and combine.
  7. Using your fingertip, spread glaze on top of each square. Work quickly as the icing will harden.
