Oysters with Ponzu, Pickled Ginger & Flying-Fish Roe

Ingredients (Serves 2)

12 Malpeque oysters
1 tbsp ponzu*
2 cupscoarse salt (for display)
1 tbspflying-fish roe
1 tspfinely julienned ginger

Instructions

  1. Shuck oysters and drain liquor into a small bowl. Mix ponzu* with oyster liquor.
  2. Nestle oysters in their shells on a serving plate covered with coarse salt. Spoon ponzu mixture over each oyster and top with roe and pickled ginger.
  3. Nutritional information

    Nutrients per serving: 267 calories, 8 g fat, 31 g protein, 16 g carbs. Excellent source of vitamin A and iron.
