Linguine à la Casa

Serve with warm garlic bread – perfect for wiping the bowl clean.

Ingredients (Serves 6)

2 28-oz cans diced tomatoes
1 package frozen spinach
1 package cream cheese (250 g)
1 package whole-wheat linguine (375 g), cooked al dente
1 cup fresh chopped tomatoes

Instructions

  1. In a skillet, heat diced tomatoes. Add spinach and cream cheese and cook, stirring, until spinach is thawed and cream cheese is melted.
  2. Pour over cooked pasta, garnish with fresh tomatoes and serve.

Nutrients per serving: 434 calories, 16 g fat, 16 g protein, 64 g carbs, 11 g fibre. Excellent source of vitamin A.
