Lavender Quark Cheesecake

Ingredients (Serves 12)

Crust:
1 ½ cups finely ground digestive cookies (about 16)
¼ cup superfine sugar
¼ cup unsalted butter, melted
½ tsp dried lavender, finely chopped
Filling:
1 250-g package light cream cheese, room temperature
¾ cup superfine sugar
1 cup quark cheese*
1 cup 35% cream, whipped to soft peaks

Instructions

  • Butter an 8-inch springform pan.
  • In a bowl, mix all ingredients for crust together. While still warm, press into bottom of pan. Refrigerate crust while preparing filling.
  • Using an electric mixer, beat cream cheese, sugar and quark until smooth. Gently fold in whipped cream. Pour mixture over refrigerated crust and smooth surface with a palette knife. Refrigerate overnight to set.
