Strawberry Tiramisu

Creamy and velvety, this spinoff of the famous Italian tiramisu is less fattening, easier to make and sure to be a hit!

Ingredients

½ cupmilk
½ cupespresso or coffee
1package vanilla instant pudding powder
185-g package ladyfingers
4 or 5 squaresbittersweet chocolate
1250-g package cream cheese
1 cup35% cream
2 pintsfresh strawberries

Instructions

  1. Prepare espresso or coffee and let cool. Meanwhile, using an electric mixer, beat softened cream cheese until smooth.
  2. Blend in milk and half the espresso. Add in instant pudding powder and mix until creamy.
  3. Whip cream to a soft peak and fold in. Brush remaining espresso over ladyfingers.
  4. Line bottom of glass bowl with half of the ladyfingers and top these with 1 pint of sliced fresh strawberries. Cover with half of cheese mixture, and sprinkle with 3 squares grated bittersweet chocolate.
  5. Make second layer. Garnish with any remaining grated chocolate and berry slices.
