Prepare these just before you slip the fish in the oven for a perfectly timed, delicious meal
|2 cups||baby carrots
|1 tbsp||brown sugar
| pinch of salt

- Put carrots in a small saucepan and add butter, sugar, salt and enough water to cover. Bring to a boil and adjust heat so liquid is gently boiling.
- Cook, stirring occasionally to keep carrots from burning, until vegetables are tender and butter and sugar have made a light glaze – about 15 minutes.
