Sweet & Sour Apple Honey Chicken

This simple recipe is quick and delicious. This sauce is also great with roasted pork tenderloin.

Ingredients (Serves 4)

4 5-oz boneless, skinless chicken breasts
1 tsp vegetable oil
1 cup unsweetened applesauce
¼ cup water
3 tbsp honey
½ tsp salt
1½ cups thinly sliced red pepper
2 green onions, cut in half lengthwise, then cut into 1½-inch lengths

Instructions

  1. In a bowl, season chicken breasts with salt and pepper and toss with oil.
  2. In a heavy 10-inch skillet over high heat, sear chicken until lightly browned, about 2 minutes per side.
  3. In a bowl, combine applesauce, water, honey and salt. Add to skillet and bring to a boil.
  4. Stir in red pepper, cover and turn down heat to simmer. Cook for approximately 15 minutes, turning chicken breasts over once. The sauce should be thick. If not, remove cooked chicken and continue cooking sauce over high heat until thickened. Stir in green onions and serve.

Nutrients per serving: 289 calories, 4 g fat, 33 g protein, 32 g carbs, 3 g fibre, 294 mg sodium. Excellent source of vitamins A and B6. Good source of folate.
