Taking Stock
Tantalizing Turkey Stock
Use this stock to make one of our delicious turkey soups.
Ingredients (Serves 4)
| 1 | tbsp vegetable oil |
| 2 | large onions, skin on, roughly chopped |
| 3 | carrots, chopped |
| 2 | celery stalks, chopped |
| 1 | turkey carcass chopped into quarters (or turkey parts equal to 3 pounds) |
| 2 | bay leaves |
Instructions
- In a large stockpot, saute vegetables in oil over medium heat until lightly browned and softened.
- Add turkey and bay leaves and cover completely with cold water. Bring to a boil then reduce heat to a simmer. Skim any foam that rises to the top, and continue to simmer for at least 2 hours.
- Strain and discard solids. Cool and refrigerate or freeze until ready to use.
