Since each barbecue has its own unique level of heat, cooking times given in recipes are variable. As you continue to perfect your craft and learn when to pull that steak off the grill, don’t be afraid to peek and cheat – make a small incision into whatever you’re cooking and see where it’s at. This allows you to become comfortable with cooking times, and the colours and feel of doneness. Carry-over cooking time – allowing meats to rest – is also key in delivering a perfectly grilled piece of meat. Always allow your meats to rest 5-10 minutes after coming off the barbecue.
