How to Layer a Cake
Icing is a cakewalk when you follow these 4 simple steps from Helen Shroyer, celebrity cakemaker and owner of Toronto’s Marmalade Cake Company.
Step 1: Lop off the top Once cakes have cooled, remove from pans and place on work surface. Using a serrated knife, slice the rounded tops off both cakes. This will allow layers
to stack evenly.

The first time I made a cake for my wife's birthday I omitted to cut off the round portion on all four tiers. I used more icing on the sides to keep it level. I then hid the cake on the top level of the pantry - once it was time to pull out the cake and display it proudly to her (my very first cake after all) I opened the cupboard only to find a tier on each lower shelf - what a mess!
