Things you need to know about ribs.

Most butchers have great pre-marinated ribs to save you time. You can always add your own barbecue sauce while they are on the grill.

Cooking: Metal rib racks are excellent gadgets to have for cooking ribs on the barbecue. They allow you to cook your ribs without having to continually flip them. Try this indirect heat method for the most tender fall-off-the-bone ribs. Tip: Ribs will stay hot for up to one hour if you place them in a single layer in a paper bag and close it tightly.

Portioning: Serve of a side per person.

Serving: Plate each portion for guests and have a platter with extras to pass around for those with an appetite. Don’t forget an empty bowl for guests to discard the bones, and finger bowls for fast cleanup.
