Tomato Facts

  • Don’t refrigerate your tomatoes – cold temperatures can make the flesh pulpy and mute the flavour.
  • Because it contains the seeds of the plant, a tomato is actually a fruit.
  • 4 cups of chopped tomatoes equals one 28-ounce can.

Healthy Tomatoes

  • A good source of Vitamins A and C, folate, potassium as well as lycopene, an antioxidant that protects against certain cancers.
  • Unlike most foods, cooking tomatoes can actually make them more nutritious. Heat releases and concentrates the lycopene, allowing for greater absorption into the body.
  • Olive oil improves the absorption of a tomato’s nutrients.
