*MASCARPONE: The Italian version of very rich cream cheese. Found layered in desserts like tiramisu, it is also delicious simply topped with fresh fruit.

Glazed Figs with Mascarpone* Cream

These match perfectly with our Olive Oil Apple Cider Cake but are also great on their own.

Ingredients (Serves 8)

Glazed Figs
1/2 cup orange juice
1/4 cup balsamic vinegar
1/4 cup granulated sugar
1/2 teaspoon orange zest
1 pint fresh figs, halved
Mascarpone* Cream
2 cups mascarpone cheese
1/2 cup 35% cream
2 tablespoons icing sugar

Instructions

Glazed Figs
  1. In a small pot, combine orange juice, vinegar, sugar and zest. Boil over high heat, stirring to dissolve sugar. Reduce heat and simmer for 5 minutes.
  2. Preheat broiler.
  3. Gently toss figs with glaze and spread out on a sheet pan in a single layer, cut-side up. Cook under broiler for 6-8 minutes until lightly caramelized.
Mascarpone* Cream
  1. Using an electric mixer, beat mascarpone until smooth. Continue beating and add cream in a slow, steady stream.
  2. Add sugar and beat for 3 more minutes. Set aside.

Nutrients per serving (plain): 382 calories, 31 g fat, 4 g protein, 23 g carbohydrates, 2 g fibre. Source of vitamin D.
