Tuscan Harvest
Glazed Figs with Mascarpone* Cream
These match perfectly with our Olive Oil Apple Cider Cake but are also great on their own.
Ingredients (Serves 8)
Glazed Figs| 1/2 | cup orange juice |
| 1/4 | cup balsamic vinegar |
| 1/4 | cup granulated sugar |
| 1/2 | teaspoon orange zest |
| 1 | pint fresh figs, halved |
| 2 | cups mascarpone cheese |
| 1/2 | cup 35% cream |
| 2 | tablespoons icing sugar |
Instructions
Glazed Figs- In a small pot, combine orange juice, vinegar, sugar and zest. Boil over high heat, stirring to dissolve sugar. Reduce heat and simmer for 5 minutes.
- Preheat broiler.
- Gently toss figs with glaze and spread out on a sheet pan in a single layer, cut-side up. Cook under broiler for 6-8 minutes until lightly caramelized.
- Using an electric mixer, beat mascarpone until smooth. Continue beating and add cream in a slow, steady stream.
- Add sugar and beat for 3 more minutes. Set aside.
