Tuscan Harvest

Olive Oil Apple Cider Cake

Don't be afraid to make this in advance. The olive oil and apple keep it moist

Ingredients (Serves 12)

2 apples peeled, cored and quartered
1/4 cup apple cider
3 cups all-purpose flour
tsps baking powder
1/4 tsp salt
5 eggs
1½ cups granulated sugar
1 cup olive oil

Instructions

  1. Preheat oven to 325 F.
  2. Butter and flour 8-inch spring-form pan.
  3. Combine apples with 1/2 of apple cider in a saucepan over medium heat. Cover and simmer until apples are falling apart. Add in remaining apple cider and mash with a fork.
  4. Mix together flour, baking powder and salt in a small bowl.
  5. Using an electric mixer, beat eggs and sugar until tripled in volume.
  6. Gently fold in 1/3 of dry ingredients with a spatula, then add 1/4 cup apple sauce and 1/2 cup olive oil. Continue to add dry and wet ingredients (gently to avoid deflating batter), ending with dry. Spoon batter into pan and bake for 1 hour or until a toothpick inserted into centre comes out clean. Cool before removing from pan.
