Olive Oil Apple Cider Cake
Don't be afraid to make this in advance. The olive oil and apple keep it moist
Ingredients (Serves 12)
| 2 | apples peeled, cored and quartered |
| 1/4 | cup apple cider |
| 3 | cups all-purpose flour |
| 1½ | tsps baking powder |
| 1/4 | tsp salt |
| 5 | eggs |
| 1½ cups | granulated sugar |
| 1 cup | olive oil |
Instructions
- Preheat oven to 325 F.
- Butter and flour 8-inch spring-form pan.
- Combine apples with 1/2 of apple cider in a saucepan over medium heat. Cover and simmer until apples are falling apart. Add in remaining apple cider and mash with a fork.
- Mix together flour, baking powder and salt in a small bowl.
- Using an electric mixer, beat eggs and sugar until tripled in volume.
- Gently fold in 1/3 of dry ingredients with a spatula, then add 1/4 cup apple sauce and 1/2 cup olive oil. Continue to add dry and wet ingredients (gently to avoid deflating batter), ending with dry. Spoon batter into pan and bake for 1 hour or until a toothpick inserted into centre comes out clean. Cool before removing from pan.
