Red River Cereal & Saskatoon Berry Muffins

These “ridiculously delicious” muffins capture an incredible amount of Prairie goodness.

Ingredients (MAKES 12 MUFFINS)

1          cup all-purpose flour
1 cup spelt flour
1 cup granulated sugar
1/2 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
1 cup Red River Cereal
2 eggs
3/4 cup plain yogurt
1/2 cup vegetable oil
1 teaspoon vanilla extract

zest of 1 lemon
2 cups Saskatoon berries (or berries of your choice) 

Instructions

  1. Preheat oven to 350 F.
  2. Combine flours, sugar, baking soda, baking powder, salt and Red River Cereal in a large bowl.
  3. In a separate bowl, mix together eggs, yogurt, vegetable oil, vanilla and lemon zest.
  4. Mix wet ingredients into dry ingredients. Gently fold in berries.
  5. Spoon batter into prepared muffin cups, filling to the top. Bake for approximately 30-40 minutes or until toothpick inserted comes out dry.

Nutritional information

Nutrients per muffin: 294 calories, 11 g fat, 6 g protein, 45 g carbohydrates, 4 g fibre. Excellent source of vitamins D and E. Very high source of fibre.

I tried this recipe, but I think the Red River Cereal should be soaked, or cooked before putting into muffins.....they are crunchy otherwise.

I've made these muffins numerous times now, and I agree with Cathie. I do soak the cereal before adding to the recipe. My modification is: 1 cup water to 1 cup red river cereal, soak until all the water is absorbed and then add to the wet ingredients. I then follow the rest of the recipe. I also change the berries to whatever fruit I have on hand - today I added fresh figs.

I disagree about soaking the cereal. I find the more robust texture appealing and similar to corn meal muffins.
