Pan-Seared Digby Scallops

Digby, aka the Scallop of the World, is a charming fishing community on the Bay of Fundy, N.S. Founded in 1783, it's home port to one of the world’s largest scallop fleets.

Ingredients (MAKES 1 SERVING)

2          tablespoons clarified butter
3 large scallops

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add 2 tablespoons clarified butter and place 3 large scallops per person in pan. Cook for 2 minutes until scallops develop a golden colour.
  3. Gently turn each scallop over and cook for 2 more minutes. Serve with a squeeze of lemon and your favourite side dish.

Nutrients per 3-scallop serving: 181 calories, 10 g fat, 19 g protein, 3 g carbohydrates, 184 mg sodium. Excellent source of vitamin B12 and magnesium.
