Seared Tuna Steaks With Sweet Potato Mash*
Colourful and delicious.
Ingredients (4 servings)
| 4 | 4 oz. fresh tuna steaks |
| all-purpose flour for dusting | |
| 5-1/2 | tablespoons sunflower oil |
| 3 | cups orange-fleshed sweet potatoes, peeled and diced |
| 1 | small onion, chopped |
| 1 | teaspoon ground cumin |
| 1 | teaspoon ground coriander |
| 4 | teaspoons grated fresh ginger |
| 1 | chili, seeded and finely chopped |
| 2 | garlic cloves, crushed |
| 1 | cup coconut milk |
| 3 | tablespoons roughly chopped cilantro leaves, plus extra for garnish |
| 4 | green onions, sliced |
| 2/3 | cup light soy sauce |
Instructions
Sweet Potato Mash- Heat 2 teaspoons sunflower oil in a heavy-based saucepan.
- Add sweet potatoes, small onion, cumin and ground coriander and sweat for 5 minutes, until softened but not browned.
- Stir in 2 teaspoons ginger, chili, garlic and coconut milk. Season lightly with a pinch of salt and bring to the boil.
- Cover pan and simmer over a low heat for 15 minutes, until sweet potatoes are tender.
- Mash mixture, mix well with a whisk and keep warm.
- Mix together 2 teaspoons ginger, green onions and light soy sauce in a bowl. Put aside.
- Dust tuna lightly with flour and season with salt and pepper.
- Heat 3 1/2 tablespoons sunflower oil in a non-stick frying pan until nearly smoking.
- Add tuna immediately and cook for 1 minute on each side.
- Remove fish from pan and place on a tray lined with kitchen paper towels to drain.
- Mix fresh cilantro into potato mash.
- Place a spoonful of mash on each plate and place fish on top.
- Spoon dressing around and garnish with cilantro.
