Red Onion Marmalade

A delicious spread that works perfectly on a Grilled Striploin Steak Baguette.

Ingredients (Makes 3 cups)

1/3 cup olive oil
4 large red onions, peeled and thinly sliced
1 tbsp kosher salt
3/4 cupgranulated sugar
3/4 cup ruby port
3/4 cup red wine vinegar
1 tbspchopped, fresh thyme

Instructions

  1. In a pot over medium heat, warm olive oil and red onions.
  2. Cook for 7 minutes or until very soft, stirring frequently.
  3. Add salt and sugar, and cook for 8 more minutes.
  4. Add port, vinegar and thyme, and bring to a boil.
  5. Reduce heat to a simmer and continue cooking for another 20 minutes.
  6. Cool slightly.

Nutritional information

Nutrients per serving (3 tbsp): 95 calories, 5 g fat, 415 mg sodium, 13 g carbs, 1 g fibre.
