Red Onion Marmalade
A delicious spread that works perfectly on a Grilled Striploin Steak Baguette.
Ingredients (Makes 3 cups)
| 1/3 cup | olive oil |
| 4 | large red onions, peeled and thinly sliced |
| 1 tbsp | kosher salt |
| 3/4 cup | granulated sugar |
| 3/4 cup | ruby port |
| 3/4 cup | red wine vinegar |
| 1 tbsp | chopped, fresh thyme |
Instructions
- In a pot over medium heat, warm olive oil and red onions.
- Cook for 7 minutes or until very soft, stirring frequently.
- Add salt and sugar, and cook for 8 more minutes.
- Add port, vinegar and thyme, and bring to a boil.
- Reduce heat to a simmer and continue cooking for another 20 minutes.
- Cool slightly.
