Smokey Oka Cheese Salad

Ingredients

8 cups (2 L) assorted lettuce greens, shredded (curly endive, arugula or spring mix)
1/2 lb (250 g) smoked salmon, cut into thin strips
1/3 lb to 1/2 lb (150 g to 250 g) Canadian Oka cheese, diced
  Drained capers
  Olive oil
  Freshly ground pepper

Instructions

  1. Divide lettuce greens among serving plates.
  2. Top with smoked salmon and Canadian Oka cheese.
  3. Garnish with capers and drizzle with olive oil.
  4. Season to taste with freshly ground black pepper.
  5. Serve immediately.
