Sour Cherry Fool

One teaspoon of rosewater is the magic ingredient.

Ingredients (Serves 4)

1 28-oz jar sour cherries
1 cup 35% cream
1/2 cup super-fine sugar
1/2 cup low-fat yogurt
1 tsp store-bought rosewater

Instructions

  1. Drain cherries, reserving liquid.
  2. Pulse cherries in a food processor or blender until partially pureed but still somewhat chunky.
  3. In a small pot over medium heat, reduce cherry juice by half or until syrupy. Cool and set aside.
  4. Whip cream with sugar to a soft peak. Fold yogurt and rosewater into whipped cream.
  5. Mix in a little of the pureed cherries.
  6. In 4 glasses, layer ingredients, starting with pureed cherries followed by the whipped cream/yogurt mixture, drizzling syrup as you go.

Nutritional information

Nutrients per serving: 470 calories, 23 g fat, 4 g protein, 67 g carbs, 2 g fibre. Excellent source of vitamins A and D.
