Grilled Cheddar & Apple Panini
Canadian Cheddar, orchard apples and homemade apricot chutney make this delicious meal a sweet & savoury success.
Ingredients (serves 6)
| 12 | thick slices artisan bread |
| 3 tbsp | unsalted butter, softened |
| 1/2 cup | prepared fruit chutney (apricot or mango) |
| 12 oz | sliced aged cheddar cheese |
| 1 | green apple, halved, cored, thinly sliced |
Instructions
- Preheat oven to 425°F. Line a sheet pan with parchment paper and set aside. Lightly butter bread, one side only. With buttered sides down, spread 1 tablespoon chutney over each of the six slices, top with cheese and apple slices, and cover with remaining bread, buttered sides up.
- In a large non-stick skillet over medium heat, grill sandwiches until golden, about 3 minutes per side. Transfer sandwiches to prepared sheet pan and bake until heated through and cheese melts, about 5 minutes. Serve with soup or mixed green salad.
