Chef's Tip
Haloumi is a salty cheese, similar in texture to mozzarella, made from sheep’s milk. The traditional cheese of Cyprus, it sounds exotic but is readily available at your local supermarket. Ouzo is a clear, sweet, anise-flavoured liqueur.

FOOD

Grilled Haloumi with White Corn & Apple Salsa

The slight saltiness of the haloumi is delicious with the tart apple salsa

Ingredients (serves 6)

1 cup peeled, cored and finely diced Granny Smith apple
½ cup fresh white corn niblets
¼ cup finely chopped white onion
2 green Thai chilis, seeded and finely sliced
2 tbsp fresh lime juice
2 tbsp ouzo
1 tbsp olive oil plus extra for
brushing cheese
12 oz haloumi cheese, cut into ¼-inch slices

Instructions

  1. In a bowl, combine apple, corn, onion and chilis, and mix with lime juice, ouzo and oil. Season with salt and pepper.
  2. Brush each side of cheese with oil. Using a non-stick grill pan or your barbecue, cook cheese 1 minute per side or until golden and softened.
  3. Spoon 1 tablespoon salsa on top and serve.
