Crimple Tart
Wish reader Sara Moosa says her mom, Yasmin, learned this recipe from her Cape Town neighbours in South Africa. Sara says it reminds her of her roots.
Ingredients (Makes 30 Squares)
| 1/2 | cup butter |
| 1/4 | cup super-fine sugar |
| 2 | tablespoons vegetable oil |
| 1 | teaspoon vanilla extract |
| 1 | egg, beaten |
| 2 | teaspoons baking powder |
| 2 | cups all-purpose flour |
| 1/2 | cup wared apricot jam for spreading |
| 1/4 | cup shredded coconut |
Instructions
- Preheat oven to 350 F.
- Using an electric mixer, cream butter and sugar together. Add oil and vanilla. Stir in egg and mix well.
- Add flour and baking powder and knead lightly into a soft dough. Divide in two and refrigerate half for at least 30 minutes.
- Spread remaining half into an ungreased 11" x 8" pan. Spread jam evenly over dough and sprinkle with coconut. Grate refrigerated dough over the top.
- Bake for 25 minutes. Dust top with icing sugar while still hot, let cool and cut into squares.
