Fava Beans & Orzo Salad
This meal is a fresh and satisfying take on salad.
Ingredients (Serves 4)
| 4 oz | orzo or other small pasta |
| 2 lb | fava beans, blanched and peeled |
| 3 tbsp | extra-virgin olive oil |
| 1 | red onion, thinly sliced |
| 2 | cloves garlic, minced |
| 1-1/2 tbsp | chopped fresh marjoram |
| 3 tbsp | chopped oil-packed sun-dried tomatoes |
| 3 tbsp | red wine vinegar |
| 1 | lemon, juiced |
| 1/2 tsp | salt |
| 1/2 tsp | freshly ground pepper |
| 1 bunch | arugula |
Instructions
- Cook orzo according to package directions and drain.
- In a large skillet over medium, heat oil. Add onion and garlic and cook for 7 minutes, or until very soft. Remove from heat and stir in marjoram, tomatoes, vinegar, lemon juice, salt, and pepper. Add beans and orzo and toss to coat well.
- Divide arugula among 4 salad plates. Top with bean salad.
