Fava Beans
Also known as "faba" or "broad beans", fava beans are very common in Mediterranean cooking.

Chef's Tip
Substitute 3 cups fresh or frozen peas or lima beans for fava beans.

Fava Beans & Orzo Salad

This meal is a fresh and satisfying take on salad.

Ingredients (Serves 4)

4 oz orzo or other small pasta
2 lb fava beans, blanched and peeled
3 tbsp extra-virgin olive oil
1 red onion, thinly sliced
2 cloves garlic, minced
1-1/2 tbsp chopped fresh marjoram
3 tbsp chopped oil-packed sun-dried tomatoes
3 tbsp red wine vinegar
1 lemon, juiced
1/2 tsp salt
1/2 tsp freshly ground pepper
1 bunch arugula

Instructions

  1. Cook orzo according to package directions and drain.
  2. In a large skillet over medium, heat oil. Add onion and garlic and cook for 7 minutes, or until very soft. Remove from heat and stir in marjoram, tomatoes, vinegar, lemon juice, salt, and pepper. Add beans and orzo and toss to coat well.
  3. Divide arugula among 4 salad plates. Top with bean salad.
