Chef's Tip
Sweeten crème fraîche just as you would whipped cream. It also makes a wonderful, tangy addition to soups, mashed potatoes or fresh fruit.

Crème Fraîche

This tangy cream just gets better with age and it will keep up to 10 days covered and refrigerated.

Ingredients (Makes 2 cups)

2 cups 35% cream
2 tbsp buttermilk

Instructions

  1. Place cream and buttermilk in a glass jar. Cover with lid and shake well. Let stand at room temperature until thickened, about 24 hours. The warmer the room, the quicker it will thicken.
  2. Once mixture has thickened slightly, refrigerate for at least 6 hours before using. The mixture will continue to thicken and develop its tangy flavour the longer it is refrigerated.

Is it safe to leave at room temperature for 24 hours and then consume? How long would it take to thicken if left refrigerated?
