Grilled Tofu with Chili Pepper, Bok Choy & Ginger

Tofu can taste superb – yes, it really can! With the right type of tofu and flavourings, you've got a dish everyone will enjoy

Ingredients (Makes 2 servings)

1 cup organic, firm tofu
2 large garlic cloves, crushed
1 tbsp grated fresh ginger
1-2 tbsp soy sauce, plus a little extra for serving
1 tbsp mirin
2 cups bok choy, sliced
2 tbsp canola oil
2 cups fresh shiitake or portobello mushrooms, washed and sliced
1/2 mild red chili pepper, seeded and chopped
2 small green onions, sliced
1-2 tsp dark sesame oil (optional)
1/2-1 tsp toasted sesame seeds

Instructions

  1. Drain tofu and cut crosswise into rectangles around 1/4-inch thick. Cut these into triangles and place in a shallow dish. Mix together half the garlic, half the ginger, soy sauce and mirin and pour over tofu, making sure tofu is coated. Set aside.
  2. Heat 1 tablespoon oil in a wok or large pot and add mushrooms, bok choy, chili pepper, green onions and remaining garlic and ginger. Stir-fry for about 6 minutes, or until bok choy is tender but still crisp.
  3. Meanwhile, brush griddle pan with remaining oil and heat. Pick up a piece of tofu, letting excess liquid run off. Place tofu on hot grill pan, and repeat with remaining tofu (you may have to do it in more than one batch, depending on the size of your griddle). Cook for 2-3 minutes, until tofu is sealed and seared and has brown stripes, then flip pieces over to cook the other side.
  4. Add any remaining tofu marinade to bok choy mixture, stir and season with salt, pepper, sesame oil and a dash of soy sauce. Serve with tofu, sprinkle with sesame seeds.
