About Açai
Açai berries grow on palm trees mainly in Brazilian rainforests and are harvested twice a year. The seeds make up about 80% of the berry’s size, and the only edible part is the thin layer of pulp between the seeds and outer skin.

How It Tastes
Dark purple and grape-like in appearance, açai pulp tastes like a blend of mixed berries with a faint chocolate note – just like some red wines.

Where to Find It
Look for pure, unsweetened açai in powder form, caplets or frozen pulp or juice at health-food stores and in supermarket health aisles.

Chicken with Açai Red Wine Sauce

The açai’s mild chocolate flavour complements the wine and rounds out the vinegar’s tartness.

Ingredients (Makes 4 servings )

4 boneless, skinless chicken breasts
3 tbsp olive oil
2 tbsp chopped shallots
2 tbsp minced garlic
1 tbsp chopped fresh thyme
1/3 cup thawed açai berry pulp
1/4 cup red wine
1 tbsp balsamic vinegar

Instructions

  1. Season chicken with salt and pepper.
  2. Heat a large skillet over high heat and add oil. Sear chicken on one side until golden brown, about 5 minutes. Reduce heat to medium, flip chicken and cook for 12 minutes or until juices run clear.
  3. Transfer chicken to a platter and tent with foil.
  4. In same skillet, sweat shallots for about 2 minutes, stir in garlic and thyme, and cook for 1 minute. Deglaze with açai pulp, wine and vinegar. Season to taste with salt and pepper.
  5. Drizzle sauce over chicken to serve.

I try most of your 20 minute supper club recipes and am pleased to see you list the nutrients at the bottom of most recipes but am wondering why there is no mention of sodium content in the recipes. Since I am trying to limit my intake of sodium, this info would be extremely helpful. Thanks.
