Warm Cider-Baked Apple with Vanilla Sour Cream

Serve with Roasted Duck Legs with Rhubarb Orange Sauce and Spring Garlic Chive Soup.

Ingredients (Serves 2)

1/2 teaspoon vanilla extract
1/4 cup sour cream
2 Royal Gala apples, whole and cored
2 tablespoons unsalted butter
2 tablespoons brown sugar, plus 1 teaspoon for garnish
1/2 cup apple cider

Instructions

  1. Preheat oven to 350 F.
  2. In a small bowl, combine vanilla and sour cream.
  3. Fill each apple with 1 tablespoon each butter and sugar. Set apples in a small baking dish and pour in cider.
  4. Bake uncovered for 45 minutes or until apples are very tender.
  5. Serve in a shallow bowl with any remaining cider. Top with sour-cream mixture and sprinkle with brown sugar.
  6. Nutritional information

    Nutrients per serving: 307 calories, 17 g fat, 1 g protein, 40 g carbohydrates, 4 g fibre. Excellent source of vitamin C.
