Tuna Rounds With Tomatillo Guacamole*
This is a light and delicious meal that takes almost no time to prepare. If you can't find tomatillos, any other type of tomato will work.
Ingredients (Makes 6 servings)
| 1 | Ahi tuna loin, about 1 lb and 2-inches wide |
| 1/2 tsp | kosher salt |
| 1/2 tsp | freshly ground black pepper | 1 tbsp | olive oil |
| For guacamole: | |
| 2 | tomatillos |
| 2 | avocados |
| 2 tsp | minced shallot |
| 1/2 tsp | kosher salt |
| 1/2 tsp | freshly ground black pepper |
| 1 tbsp | lime juice |
Instructions
- Bring tuna to room temperature. Season with salt and pepper. In a pan, heat oil over high heat until smoking. Add tuna and sear on all sides until browned, about 6 minutes. Remove from pan and let rest.
- For guacamole, rinse, husk and finely chop tomatillos. Peel, pit and mash avocados and stir in tomatillos and shallots. Season with salt, pepper and lime juice.
- Slice tuna to desired thickness, top with a spoonful of guacamole, and serve.

I love your recipes. I have noticed though that you don't always include the nutritional information. i.e. calories, fat, carbohydrate contents. Is it possible to add this information? Thank you
