2-Step Turkey Club
Experiment with our salad version of the classic club sandwich.
Ingredients (Serves 4)
| 1 | 10-oz package pre-cut romaine lettuce |
| 1-1/2 | cups bite-sized pieces cooked turkey |
| 1 | pint cherry tomatoes, halved |
| 1/3 | cup low-fat buttermilk ranch dressing |
| 6 | slices precooked bacon, crumbled |
| 1/4 | cup crumbled blue cheese |
| 1 | demi-baguette |
Instructions
- In a large bowl, toss lettuce, turkey and tomatoes with dressing. Top with bacon and sprinkle with blue cheese.
- Cut baguette lengthwise, lightly brush each half with olive oil and toast. Serve with salad.
Nutritional information
Nutrients per serving: 471 calories, 24 g fat, 28 g protein, 38 g carbs, 4 g fibre. Excellent source of folate and vitamin C.
