Pink Almond Squares
Ingredients (Makes 12 squares )
| 1/3 | cup blanched almonds |
| 1/4 | cup granulated sugar |
| 2 | egg whites |
| 1 | cup marzipan or almond paste |
| 1 | cup icing sugar |
| 3 | drops red food colouring |
Instructions
- In a food processor, blend almonds and sugar. Add 1 egg white and blend until mixture is completely smooth, about 5 minutes.
- Place marzipan in a bowl and add almond mixture. Mash with a fork or potato masher.
- Knead mixture and place on parchment paper. Using the paper to protect your hands (it will be sticky), shape into a 5 x 5-inch square and refrigerate for 2 hours.
- Preheat oven to 400 F.
- Cut dough into 12 precise squares and place them on a parchment paper-lined sheet pan. Bake for 8 minutes, or until lightly browned.
- For the glaze, put remaining egg white into a small bowl. Add icing sugar in 1/4 cup intervals, whisking until you reach a toothpaste-like texture. Add food colouring and combine.
- Using your fingertip, spread glaze on top of each square. Work quickly as the icing will harden.
