Chef’s Tip:
Look for buffalo’s milk ricotta at your local gourmet shop. It’s delicious and has a fabulous texture when baked.

FOOD

Baked Ricotta Hearts

Ingredients (Makes 6 servings )

1          454 g tub smooth ricotta cheese
1 tsp chili flakes
2 tbsp olive oil + 1/4 cup for dressing
6 large radishes, trimmed and cut into eighths
1 tbsp honey
1 tbsp apple juice
1 tbsp lemon juice

Instructions

  1. Preheat oven to 400 F.
  2. Mix ricotta with chili, and season with salt and pepper.
  3. Brush 6 heart-shaped moulds or oven-safe ramekins with 2 tablespoons oil and fill them with ricotta mixture. Bake for about 15 minutes.
  4. Let cool in moulds and then turn out onto plates. Just before serving: Mix honey, apple and lemon juices, and remaining olive oil for dressing. Add radishes and season to taste. Serve each heart topped with radishes.
