Tips, facts, and how-to

*DOUBLE BOILER: A cooking utensil consisting of two nested pans designed to allow cooking without using direct heat. In a pinch, a bowl that sits snuggly on top of a pot of simmering water - without base of bowl touching water - will also work.

**SCALD: To heat a liquid almost to the boiling point. Bubbles will just begin to form around edge of pan.

Chewy Almond & Lemon Macaroons with Mint Chocolate Sauce

Serve as dessert after a main course featuring Crispy Salmon, Spring Vegetables & Verjus Sauce and Walnut-Crusted Goat Cheese with Organic Greens.

Ingredients (Serves 2)

Macaroons
1/4 cup icing sugar
2 tablespoons ground almonds
2 eggs
1 tablespoon granulated sugar
Lemon Curd Filling
1/4 cup granulated sugar
2 tablespoons fresh lemon juice
1 egg, plus reserved yolk
1/2 teaspoon lemon zest
3 tablespoons unsalted butter, melted
Chocolate Mint Sauce
2 tablespoons 35% cream
1-1/2 ounces bittersweet chocolate, finely chopped
1/4 teaspoon pure mint extract

Instructions

Macaroons

  1. Preheat oven to 325 F.
  2. Combine icing sugar and almonds in a small bowl.
  3. Separate eggs and reserve one yolk for lemon curd. Whisk egg whites and granulated sugar to a soft peak. Fold into almond mixture.
  4. On a parchment-lined baking sheet, spoon out four 3-inch circles. A piping bag makes quick work of this, but a cookie cutter can also be used as a guide.
  5. Bake for 20 minutes or until golden. Turn off heat and leave macaroons in oven with door propped open until firm and dry.

Lemon Curd Filling

  1. Using a double boiler*, combine all ingredients and whisk over high heat until smooth.
  2. Switch to a wooden spoon and stir continually until mixture has thickened, about 5 minutes.
  3. Spread out on a plate to cool. When cool, cover with plastic wrap and refrigerate until ready to use.

Chocolate Mint Sauce

  1. In a small saucepan, scald** cream. Remove from heat and add chocolate. Stir until smooth.
  2. Mix in mint. Keep at room temperature until needed. If sauce becomes too thick, warm gently over very ow heat.
  3. Putting Them Together
  4. Serve sandwich-style with lemon curd spooned between two macaroons and drizzle with chocolate sauce.

    Nutrients per serving: 676 calories, 48 g fat, 15 g protein, 56 g carbohydrates, 4 g fibre. Excellent source of vitamin A.
