Butter-Poached Lobster with Leeks & Pomegranate Glaze
This rich and flavourful dish is treat to have for dinner.
Ingredients (Serves 2)
| 2 | half-pound lobster tails, defrosted |
| 1 | cup thinly sliced, well-cleaned leeks, white part only |
| 1 | tablespoon unsalted butter, plus 1/2 cup unsalted butter, cut in 1/2-inch cubes |
| 1/2 | cup chicken stock |
| 1/4 | cup pomegranate juice |
| 2 | tablespoons Chardonnay |
| 1 | teaspoon lemon juice |
Instructions
- Preheat oven to 400 F.
- Roast lobster tails on a parchment-lined sheet pan for 10 minutes. Remove from oven and let cool slightly.
- In a small saucepan over medium-low heat, saute leeks in 1 tablespoon butter until translucent. Add chicken stock and continue to cook until almost evaporated. Season with salt and pepper. Keep warm.
- In a small saucepan, bring pomegranate juice to a boil. Turn heat to a very low simmer and reduce until syrupy. This burns easily, so be sure to watch the pot.
- Using kitchen scissors, cut down the centre of the underside of the lobster tail and remove meat. Portion meat into 1/2-inch slices. Set aside.
- Bring 1 tablespoon water to a boil in a small saucepan. Reduce temperature to very low and add cubed butter a little at a time, whisking until melted and emulsified.
- Add lobster to butter and poach over low heat for 5 minutes or until opaque.
- Mix 1 tablespoon of poaching butter into pomegranate glaze.
- In middle of plate, spoon leeks into a small mound, top with lobster meat. Whisk Chardonnay, lemon juice and a pinch of salt into poaching butter. Spoon over lobster and finish with a drizzle of pomegranate glaze.

Nutrients per serving: 779 calories, 56 g fat, 50 g protein, 17 g carbohydrates, 1 g fibre. Excellent source of vitamin A and iron.

none of these recipes are very calorie conscious are they? lol. oh well, one night of indulgence, i guess, never hurt anyone.
