Chilled Sparkling Cantaloupe Soup

This easy, no-cook soup is an elegant and refreshing start to any summer evening.

Ingredients (Serves 6)

2 medium-sized cantaloupes, peeled, seeded and roughly chopped
2 navel oranges, juiced
1 cup sparkling wine
1 tbsp chopped fresh mint

Instructions

  1. In a food processor or blender, puree cantaloupe until smooth. Strain through a fine-mesh sieve.
  2. Add orange juice and chill.
  3. Just before serving, mix in sparkling wine and garnish with mint.

Nutritional information

Nutrients per serving: 102 calories, 1 g fat, 2 g protein, 17 g carbs, 1 g fibre.
