Chilled Sparkling Cantaloupe Soup
This easy, no-cook soup is an elegant and refreshing start to any summer evening.
Ingredients (Serves 6)
| 2 | medium-sized cantaloupes, peeled, seeded and roughly chopped |
| 2 | navel oranges, juiced |
| 1 | cup sparkling wine |
| 1 | tbsp chopped fresh mint |
Instructions
- In a food processor or blender, puree cantaloupe until smooth. Strain through a fine-mesh sieve.
- Add orange juice and chill.
- Just before serving, mix in sparkling wine and garnish with mint.
