Linguine à la Casa

Serve with warm garlic bread – perfect for wiping the bowl clean.

Ingredients (Serves 6)

2 28-oz cans diced tomatoes
1 package frozen spinach
1 package cream cheese (250 g)
1 package whole-wheat linguine (375 g), cooked al dente
1 cup fresh chopped tomatoes

Instructions

  1. In a skillet, heat diced tomatoes. Add spinach and cream cheese and cook, stirring, until spinach is thawed and cream cheese is melted.
  2. Pour over cooked pasta, garnish with fresh tomatoes and serve.

Nutritional information

Nutrients per serving: 434 calories, 16 g fat, 16 g protein, 64 g carbs, 11 g fibre. Excellent source of vitamin A.

I found this a bit bland. It needs garlic, salt and pepper and some other spices to give it more flavor.

I also spiced the recipe up with a few adjustments. I used canned diced tomatoes with seasonings already in them (garlic and basil)... Also - in a separate pan, I sautéed mushrooms (that I quartered) with minced garlic... And then used it as a garnish with the diced tomatoes. Fresh grated parmesan cheese on top would also be good!! I would make this recipe again!

I agree with Aimee - I also added garlic, salt, pepper. One more idea was that I might use this sauce recipe for filling to cannelloni one day.

Yes this is a VERY bland basic recipe... with the others comments I also added other items to this dish. I added garlic, onions, mushrooms and carrots minus the spinach (Husband hates spinach!) along with some crushed red pepper. It tasted good but it sooo could use fresh tomatoes not canned because you can really taste the canniness of the canned tomatoes. I also added a touch of sugar to off set the acidity of the canned tomatoes...

I did find it a little bland as well, but I loved the diced tomatoes and spinach with cream cheese! I also added shrimp, it was delicious! Definitely will make again!
