Vidalia Onion Apple Relish
We’ve pumped up the apple flavour with the addition of apple cider and cider vinegar.
Ingredients (Makes 3-1/2 cups)
| 1/4 | cup unsalted butter |
| 3 | cups thinly sliced Vidalia onions (1 large onion) |
| 1 | tablespoon kosher salt |
| 2 | cups apple cider |
| 2 | cups cider vinegar |
| 1-1/4 | cups granulated sugar |
| 4 | Granny Smith apples, peeled and cored, cut into 1/2 -inch pieces |
| 1 | piece star anise |
Instructions
- Melt butter in a medium saucepan, then add onion and salt and cover. Simmer until onions are softened, about 15 minutes.
- Add apple cider and increase heat to high. Cook until cider is nearly evaporated, about 15 minutes.
- Add vinegar and sugar, and bring to a boil, cooking for 5 minutes.
- Reduce heat to medium low, and add apples and star anise. Cover and cook for 10 more minutes.
- Remove lid and continue to cook until thickened, about 20 minutes. Stir frequently.
- Remove star anise. Mash relish/apple mixture until smooth. Season to taste with salt and more sugar if necessary.
