Vidalia Onion Apple Relish

We’ve pumped up the apple flavour with the addition of apple cider and cider vinegar.

Ingredients (Makes 3-1/2 cups)

1/4 cup unsalted butter
3 cups thinly sliced Vidalia onions (1 large onion)
1 tablespoon kosher salt
2 cups apple cider
2 cups cider vinegar
1-1/4 cups granulated sugar
4 Granny Smith apples, peeled and cored, cut into 1/2 -inch pieces
1 piece star anise

Instructions

  1. Melt butter in a medium saucepan, then add onion and salt and cover. Simmer until onions are softened, about 15 minutes.
  2. Add apple cider and increase heat to high. Cook until cider is nearly evaporated, about 15 minutes.
  3. Add vinegar and sugar, and bring to a boil, cooking for 5 minutes.
  4. Reduce heat to medium low, and add apples and star anise. Cover and cook for 10 more minutes.
  5. Remove lid and continue to cook until thickened, about 20 minutes. Stir frequently.
  6. Remove star anise. Mash relish/apple mixture until smooth. Season to taste with salt and more sugar if necessary.
