Chef's tip: Since this pizza is a snap to prepare, make two at a time—you can eat leftover slices cold or reheat the slices in the microwave. Just put in plastic wrap and refrigerate up to 4 days or freeze up to 3 months. There's no need to thaw before reheating in the microwave for 1 to 2 minutes on high.

Substitute: You can use fresh or frozen pizza dough for this recipe, or you can swing by your favorite pizza shop and give them dough for their dough!

White Pizza with Basil Pesto & Pine Nuts

Sometimes a white pizza is just what the doctor ordered! Spike your dough with Parmesan, garlic, sun-dried tomatoes and fresh herbs for added flavour.

Ingredients (Serves 4)

1 lb fresh or frozen pizza dough, thawed according to package directions
3/4 cup prepared basil pesto
1-1/2 cups shredded part-skim mozzarella cheese
1/4 cup freshly grated Parmesan
1/3 cup pine nuts

Instructions

  1. Preheat oven to 450ºF.
  2. Punch dough down with your fist and transfer to a lightly floured work surface (or cover work surface with parchment or waxed paper to prevent dough from sticking). Using a rolling pin, roll it out into an 18-inch circle.
  3. Transfer dough to a large baking sheet and spread pesto evenly over top, to within 1/2-inch of the edge. Sprinkle mozzarella, Parmesan, and pine nuts evenly over top.
  4. Bake until cheese melts and crust is golden brown, about 10 minutes. Let stand for 5 minutes before cutting into slices.
