Grilled Asparagus, Summer Pea & Radish Salad
Pair these three summer staples with a yogurt mint dressing for a match made in heaven.
Ingredients (Serves 6)
| 1 | tsp olive oil |
| 1 | lb asparagus, ends trimmed |
| 1/4 | cup finely diced radish |
| 1/2 | cup sweet peas, blanched |
Instructions
- Toss asparagus with olive oil and grill over medium heat until tender. Depending on thickness of spears, this should take no more than 5 minutes.
- Cool and slice asparagus on the bias into one-inch pieces.
- Combine all vegetables in a bowl and toss with yogurt mint dressing. Season with salt and pepper.
Nutritional information
Nutrients per serving (salad with dressing): 63 calories, 3 g fat, 3 g protein, 7 g carbohydrates, 2 g fibre. Excellent source of folate.
