Breakfast Tortillas
There’s no need to rush your guests, because this assemble-ahead breakfast is ready to eat when you are.
Ingredients (Serves 4)
| 4 | slices bacon |
| 1 | large granny smith apple, cored and sliced |
| 3 | tbsp maple syrup |
| 1/4 | tsp ground cinnamon |
| 1 | cup shredded, aged cheddar cheese |
| 4 | small whole-wheat tortillas |
Instructions
- Place a skillet over medium-high heat. Add bacon and cook, turning often, until crisp. Remove from pan and drain on paper towel. Reserve.
- Remove all but 1 tablespoon of fat from pan. Add apple slices and cook, turning as needed, until apples are browned. Drizzle maple syrup over apples and sprinkle with cinnamon. Turn apples to coat. Sauté for 1-2 minutes or until apples are well glazed. Crumble cooled bacon into pan.
- Lay tortillas out on a clean work surface. Top one half of each tortilla with 2 tablespoons cheese and then of apple mixture spread out evenly. Top with remaining cheese. Fold tortilla over to enclose filling. (Tortillas can be prepared to this point, covered tightly and refrigerated for up to 12 hours. Bring to room temperature before finishing.)
- Heat a dry skillet over medium heat. Add tortillas and cook two at a time, turning once or twice, until brown on the outside and cheese is melted, about 3 to 5 minutes.
