Penne Alla Vodka

Add chili flakes, cubed bacon, or fresh herbs to make this dish your own.

Ingredients (Serves 10)

1 onion, finely chopped
2 tbsp olive oil
2 410-g cans chopped tomatoes
2 tbsp 35% cream
1 kg penne rigate (or other short ridged pasta)
125 mLvodka
4 tbsp unsalted butter
Parmesan, for grating

Instructions

  1. Bring a large pot of salted water to a boil. In a large pan, heat oil and add onion and salt. Cook, stirring occasionally, until soft and beginning to caramelize.
  2. Add chopped tomatoes and continue cooking over a low heat, simmering for another 12 minutes. (If you are cooking this ahead, stop here).
  3. Stir in cream and take pan off heat. (Reheat the almost finished tomatoes if you've prepared ahead).
  4. Add pasta to boiling water and cook al dente.
  5. Drain cooked pasta and return to pot. Add vodka, butter and salt to taste. Pour sauce over pasta and toss to coat. (You can also add pasta into tomato sauce, depending on the size of your pans).
  6. Serve with parmesan.
