Zucchini Oat Bran Bread

Spice up this recipe with a teaspoon of red pepper flakes.

Ingredients (MAKES 1 LOAF (12 SLICES))

1/3 cup canola oil
1/3 cup buttermilk
2 large eggs
1-3/4 cups all-purpose flour
1/2 cup oat bran
2 tsp baking powder
1 tsp salt
1 cup grated Romano cheese
1/2 lb zucchini coarsely grated (about 3 medium zucchinis)

Instructions

  1. Preheat oven to 375 F.
  2. Coat an 9- x 5-inch loaf pan with non-stick cooking spray.
  3. In a bowl whisk together oil, buttermilk and eggs.
  4. In a separate bowl, combine flour, oat bran, baking powder and salt, and mix well.
  5. Add oil mixture, cheese and zucchini to dry ingredients and stir until just mixed. Spoon batter into prepared pan and bake for 30 minutes. Rotate pan 180 degrees and continue to bake for another 30-40 minutes or until toothpick inserted into the centre comes out clean.
  6. Cool briefly before taking loaf out of pan to fully cool.
