Classic Zucchini Bread
This quick bread is sweet, dense and moist.
Ingredients (MAKES 1 LOAF (12 SLICES))
| 2 -1/4 cups | all-purpose flour |
| 1 tsp | baking soda |
| 1 tsp | cinnamon |
| 1/4 tsp | baking powder |
| 1-1/2 cups | granulated sugar |
| 1/2 tsp | salt |
| 2 | eggs |
| 1/3 cup | sour cream |
| 1/2 cup | corn oil |
| 2 tsp | vanilla extract |
| 2-1/2 cups | grated zucchini |
| 1/2 cup | ground nuts (optional) |
Instructions
- Preheat oven to 350 F.
- Coat an 9- x 5-inch loaf pan with non-stick cooking spray.
- Sift first 5 ingredients together and set aside.
- In a large bowl, mix remaining ingredients.
- Add wet ingredients to dry and combine.
- Pour batter into loaf pan and place on a sheet pan. Bake for 30 minutes. Rotate pan 180 degrees and continue baking for another 30-40 minutes or until a toothpick inserted into the centre comes out clean.
