Smoky Smashed Potato Salad
We kept the potato skins on for added nutrients – plus, no peeling!
Ingredients (SERVES 8)
| 2 lb | new potatoes, skin on |
| 3 | eggs, hardboiled |
| 3 tbsp | smoky mustard (you can substitute any mustard) |
| 2/3 cup | light mayonnaise |
| 1/4 cup | chopped fresh dill |
Instructions
- Place potatoes in a large pot and cover with cold water. Cook until tender.
- Drain and let sit for a few minutes.
- Place potatoes back into pot with the peeled, hardboiled eggs and smash with fork to break up.
- Mix in remaining ingredients. Season with salt and pepper.
Nutritional information
Nutrients per serving: 200 calories, 9 g fat, 5 g protein, 26 g carbs, 2 g fibre.
