Smoky Smashed Potato Salad

We kept the potato skins on for added nutrients – plus, no peeling!

Ingredients (SERVES 8)

2 lb new potatoes, skin on
3 eggs, hardboiled
3 tbsp smoky mustard (you can substitute any mustard)
2/3 cup light mayonnaise
1/4 cup chopped fresh dill

Instructions

  1. Place potatoes in a large pot and cover with cold water. Cook until tender.
  2. Drain and let sit for a few minutes.
  3. Place potatoes back into pot with the peeled, hardboiled eggs and smash with fork to break up.
  4. Mix in remaining ingredients. Season with salt and pepper.

Nutritional information

Nutrients per serving: 200 calories, 9 g fat, 5 g protein, 26 g carbs, 2 g fibre.
