Blood Orange Spinach Salad
Try this tasty salad with grapefruit, clementines, or a combination of your favourite summer citrus fruits
Ingredients
Salad:| 6 cups | baby spinach |
| 4 | blood oranges |
| 1/2 cup | blood orange juice (reserved from segments) |
| 2 tbsp | fresh lemon or lime juice |
| 1 tsp | Dijon mustard |
| 1 tbsp | honey |
| 1/2 tsp | salt |
| 1/3 cup | olive oil |
Instructions
- Segment blood oranges over a bowl and reserve juices for dressing.
- In another bowl, combine all dressing ingredients except oil.
- Slowly whisk in oil to emulsify.
- Arrange spinach and blood orange segments on a platter, and drizzle with dressing.
Nutritional information
Nutrients per serving (with 1 tablespoon dressing): 100 calories, 5 g fat, 1 g protein, 14 g carbs, 1 g fibre. Excellent source of vitamin C.
