Krupso
These little fellows of Finnish descent puff up in the oven just like a Yorkshire pudding. Once they fall, load them up with fresh berries. Alternatively you can make one large krupso in a 9- x 13-inch cake pan.
Ingredients (Makes 12)
| 3 | eggs |
| 2 cups | milk |
| 1/2 cup | granulated sugar |
| 1 tsp | salt |
| 1-1/2 cups | all-purpose flour |
| 1/4 cup | unsalted butter, melted |
| 1/2 cup | oat bran |
Instructions
- Preheat oven to 375 F.
- Whisk eggs and milk together and set aside.
- Mix dry ingredients in a separate bowl.
- Add half milk/egg mixture to dry and mix until smooth.
- Add remaining milk/egg mixture plus 2 tablespoons of melted butter.
- Divide remaining butter into muffin cups, then fill muffin cups with batter.
- Bake for about 25 minutes or until golden.
