GET MORE FIBRE
Enrich a white-flour recipe by adding a little oat bran. Just half a cup will not affect taste or texture, and you benefit from the extra fibre.

Krupso

These little fellows of Finnish descent puff up in the oven just like a Yorkshire pudding. Once they fall, load them up with fresh berries. Alternatively you can make one large krupso in a 9- x 13-inch cake pan.

Ingredients (Makes 12)

3 eggs
2 cups milk
1/2 cup granulated sugar
1 tsp salt
1-1/2 cups all-purpose flour
1/4 cup unsalted butter, melted
1/2 cup oat bran

Instructions

  1. Preheat oven to 375 F.
  2. Whisk eggs and milk together and set aside.
  3. Mix dry ingredients in a separate bowl.
  4. Add half milk/egg mixture to dry and mix until smooth.
  5. Add remaining milk/egg mixture plus 2 tablespoons of melted butter.
  6. Divide remaining butter into muffin cups, then fill muffin cups with batter.
  7. Bake for about 25 minutes or until golden.

Nutrients per serving: 170 calories, 7 g fat, 5 g protein, 23 g carbs, 1 g fibre.
