Maple-Glazed Ham, Cheese & Leek Sandwich
This twist on the breakfast sandwich offers a scrumptious mix of sweet and savoury. You can change the balance of the flavours through your selection of bread, increasing the sweetness with a choice of raisin bread, for example, or decreasing it with a rye alternative.
Ingredients (Serves 4)
| 4 tbsps | (1/2 stick) unsalted butter, softened |
| 8 slices | raisin, nut, rye, or whole wheat bread |
| 1 | large or 2 medium leeks (white and green parts), halved lengthwise and sliced into thin half-moons |
| 8 | thin slices smokey ham, about the size of the bread slices |
| 1 tbsps | maple syrup |
| 4 | one-ounce slices creamy cheese with character, like St. Andre or Brie |
Instructions
- Using 2 tablespoons butter, spread butter on one side of each bread slice. Warm the remaining 2 tablespoons butter in a large skillet over medium heat. Add leeks to skillet and saute until soft, about 7 minutes. Remove with a slotted spoon and reserve. Lightly brush both sides of ham slices with maple syrup. Add ham slices to skillet, in batches if necessary, and fry for about 1 minute, until heated through and a bit crusted in spots.
- With the buttered side of 4 slices of bread down, arrange 2 ham slices over each. Spoon leeks evenly over ham slices. Top each with a slice of cheese, then the remaining slices of bread; buttered-side up. If you want to use the same skillet for toasting the sandwiches, rinse it out well. Using the skillet or a griddle over medium heat, cook until sandwiches are golden brown and crisp, 8 to 10 minutes, turning once.
